Founded in 2008, The Beautiful Pubs Collective is an independent group of pubs in and around Leicester, led by hospitality champion and Leicester enthusiast Sam Hagger FBII.

At the heart of the Collective is a simple belief: no two pubs- or guests – are the same. That’s why each venue is uniquely tailored to its local community, shaped by the people who visit, and brought to life by the passion and personality of its team.

A deep-fried Krakauer Bacon Frankfurter, coated in panko and topped with Katsu Curry Aioli, fresh Kimchi, Kimchi Sauce, Chilli Crunch, Sushi Ginger & Coriander. 

This is not your average hot dog – this is fusion street food at its finest. The smoky, meaty depth of our Krakauer Bacon Frankfurter meets the light, crispy crunch of golden panko, creating the perfect base for an explosion of Asian and German flavour. 

Each topping brings something bold to the plate:

• Katsu Curry Aioli adds rich, creamy warmth

• Fresh Kimchi & Kimchi Sauce deliver tang and spice

• Chilli Crunch brings the heat and a savoury crunch

• Sushi Ginger & Coriander lift the dish with zing and freshness

A well-deserved win in our Chef of the Month competition – and a perfect showcase of what happens when creativity meets quality ingredients.

We also have to give special appreciation to Jim Gallivan from Bermondsey Bierkeller, who came in as a strong runner-up with a seriously impressive hotdog creation. 

Using our fiery Chilli Beef Frankfurter as the base, Jim crafted a hotdog that delivered bold flavours and indulgent comfort in every bite.

Served in a soft brioche bun, this beauty was topped with:
🌶️ A generous helping of spicy chilli beef
🧀 Gooey melted cheese
🧅 Crunchy crispy onions
🌶️ And finished with a creamy, homemade Jalapeño mayo
