Executive Chef of German Gymnasium, Bjoern Wassmuth, talks to The Sausage Man and Lamb Weston about preparing German food with style. With some top tips to make our hot dogs even more impressive, Chef Bjoern gives us an exclusive insight into how he creates dishes and bar snacks that look and taste amazing!

German Gymnasium

The iconic German Gymnasium restaurant sits between St Pancras International and Kings Cross, at 1 King’s Boulevard in London. Chef Bjoern explains: “This bar snack can be reproduced with any sausage, however personally I choose the frankfurter as they crispen up nicely.” With this dish you can create an amazing looking dish effortlessly.

In this episode, Chef Bjoern shows us a quick and simple bar snack. Using the Krakauer bacon Frankfurter sliced and fried to create an interesting looking dish. And topped with twister fries and a simple mayonnaise based sauce. An easy dish that tastes and looks amazing too. This is a great choice for any menu!

Ingredients

  • 2 Krakauer Bacon Frankfurter XXL
  • 100 g Lamb Weston Twister Fries
  • 50 g Mayonnaise
  • Smoked Chipotle a dash
  • Curry Sauce a dash
  • BBQ Sauce a dash
  • Spices (your choice) a sprinkle
  • Coriander a handful
  • 2 Chillies sliced
  • Crispy Fried Onions a handful
  • Pea Shoots few for decoration

Instructions

  • Create the Frizzle
    Cut your Krakauer Bacon Frankfurter into 3 sections. Slice the sausages with a cross section down to the centre. Do the same to the bottom. Repeat this with all sections.
    Be careful when slicing the sausages!
  • Fry Up
    Add the sliced sausages to a fryer. These will take around 2-3 minutes to fry. Remove and drain. Add the sausages to a plate standing up. And add the twister fries on top. Your bar snack should have a lot of volume.
  • Now for the drizzle
    To drizzle over the sausages and potatoes you should use a mayonnaise based sauce. To a bowl add in the mayonnaise, a dash of curry sauce, BBQ sauce and smoked chipotle. Add a couple pinches of spices of your choice. Then drizzle the sauce over the plated dish. Add a topping a coriander, sliced chillies, crispy fried onions and pea shoots for decoration. You are now ready to serve.
